Egg Processing Modules

1. Server & Database

Ovotrack uses a SQL Server database. This database is the heart of the Ovotrack system and is usually installed on the company server. In this Ovotrack database all data is stored. Furthermore, data synchronization with external software applications, like ERP systems, is done.

The communication with the breaker can also be set up here, as long as the breaking machine is capable of that. Communication is possible with all Sanovo OptiBreaker breaking machines.

2. Supplier Label Printing

A number of labels can be pre-printed for each of your egg suppliers. These labels are usually delivered by the drivers that pick up the eggs at your suppliers.

Each label contains the required information that we already know upfront, such as name, address egg type and batch information. Furthermore, each label contains a unique ID, in text as well as in barcode.

The supplier puts one label on each pallet of eggs and can add information like quantity eggs and date of lay.

3. Receiving Eggs

When the trucks with eggs are unloaded at the breaking plant, the barcodes of the supplier labels are scanned. The first label will create an Egg Purchase Order for the particular supplier. The information that is written on the delivery form and on the labels, such as date of lay, now has to be captured in the Ovotrack Database and the stock position of these eggs is updated.

In case no label is available, for example when the supplier of the eggs is not a contracted supplier, a new label can be printed here.

Optionally a weighing scale can be connected to Ovotrack so the weight of each pallet can be gathered and stored in the database.

4. Reusables

The egg industry has increasingly turned to plastic sustainable egg transportation material (reusables), plastic pallets, trays, dividers, crates and pallecons, like the Eggs Cargo System from Gi-Ovo. Reusables are more environmentally friendly but reusables are expensive and it requires a registration system to keep track of your investment. This registration is mostly done manually which requires time and is not very accurate.

Ovotrack offers THE solution with the new software module: Ovotrack Reusables. Ovotrack Reusables helps you to automate registering your materials, in a non time-consuming way. You can register incoming and
outgoing reusables, it provides insight in where they are and shows you when to restock the farms.

Real-time insight of your reusables helps you to make the most accurate planning. This is especially beneficial as the industry is facing skyrocketing transportation costs and limited truck availability. It also gives insight in the hygienic status and provides an overview of damaged goods.


Reusables can be registered, online as well as offline, in the production center or at the farm, by scanning with a pocket PC. Among all software solutions for registering reusables, Ovotrack Reusables is the most user-friendly and integrated solution. As global market leader, Ovotrack has the biggest knowledge of the complete process within the egg industry. Ovotrack Reusables integrates easily into the existing Ovotrack Solution, however it can also be used stand-alone.

5. Egg Quality

Egg quality

At most egg processing facilities, incoming eggs are tested on Haugh units, yolk color and shell strengths. Sometimes these eggs are also candled manually to get an idea of their quality. With Ovotrack Egg Quality these testing results can be stored in the Ovotrack Database automatically.

During receiving an extra label will be printed for the sample of eggs to be tested. This label will go with the eggs to the laboratory. The Ovotrack Egg Quality module will be installed on an existing PC in the laboratory. Before performing the test, the barcode on the label is scanned with an Ovotrack wireless scanner. After completion of the test, the results can be imported into the Ovotrack Egg Quality module. The results will then be stored in the Ovotrack Database under the original pallet ID and are available for further reporting.

6. Weighing Scale Connection

Ovotrack offers the ability to connect a weighing scale to Ovotrack Receive. With this connection the weight of each pallet can be gathered and stored in the database.

Ovotrack is capable of communicating with all modern weighing scales, as long as they are able to export weight data.

7. Loader

LoaderAt the loader of the breaker, the pallet labels of eggs are scanned with an Ovotrack wireless scanner. The stock position of eggs is updated with every scan at the loader.

If the breaker machine supports communication, Ovotrack is able to send batch information and capture breaking results with help of the Ovotrack Breaker Batches module.

8. Breaker Batches

If the breaking machine supports communication, an Ovotrack Loader PC will be installed at the loader to enable communication. After scanning the label, the required information can be forwarded to the breaker, such as supplier name, quantity eggs and the date of lay. The breaking machine uses this data to create a new batch. At the end of the batch the breaking machine will send the breaking results back to Ovotrack, such as quantity whole eggs and quantity of empty cups.

After scanning the label, the exact moment of batch change has to be signaled on the breaking machine with help of the RFID egg. Thanks to this automatic batch change, the loader does not have to run empty to capture the exact breaking results, so there won’t be any production loss.

9. Receiving Packaging

Similar to the traceability of eggs, packaging material can also be traced. With the Ovotrack Packaging Software, a label for each pallet of packaging material can be printed at receive. Whenever this pallet is taken from the packaging warehouse to the processing room, the pallet label is scanned again.

The original traceability codes of the packaging supplier can be captured in the database as well so that correct and accurate information is available for the supplier in case of a recall.

The Ovotrack Packaging Module not only takes care of the traceability of packaging material but also offers stock control of packaging material. As Ovotrack knows the real-time stock of packaging, it is also possible to give you a warning when packaging is running out in order to buy new packaging when needed.

11. SCADA Integration

SCADA integrationOur SCADA Integration module enables a full integration between Ovotrack and the Sanovo SCADA system – ensuring streamlined operations without changing the familiar Sanovo user interface.

Unified Operation
Operators continue working within the Sanovo SCADA interface, now enhanced with batch and order activation supported by Ovotrack in the background.

Smart Batch Control
Ovotrack automatically generates batch codes for breakers, tanks, lines, and pasteurizers. Sanovo either activates the next available batch or offers a manual selection via dropdown.

Sanova SCADA systemReal-Time Tracking
Every key event, CIP-cleaning, batch start/stop, product loading, is captured by Sanovo and sent to Ovotrack. These events are logged, and batch status is updated accordingly, including automatic quality downgrades if needed.

End-to-End Process Coverage
From raw product intake and mixing to pasteurization and final product filling (tankers, containers, spray dryer, etc.), the integration supports every step of the process – including rework handling.

Order-Based Production
Operators select the relevant customer or production order at each step. For tanker filling, license plate registration ensures full traceability.

13. Printing labels for Powder Products (niet aanwezig!)

Print & Apply

Automatic case-packing is growing in the egg industry. When packing is automated, labeling should also be automated. Ovotrack Print & Apply offers fully automatic and real-time labeling of cases on a case conveyor or built into a case-packer.

Whenever an packing lane is connected to a case packer in Ovotrack End of Lane the information about the lay-out of the label of that packing lane is automatically forwarded to the Print & Apply System.

Ovotrack Print & Apply Solutions is available in different configurations so that labels can be applied on top, on the front or on the side of a case.

14. Palletizing

With wireless scanners used in the dispatch department, pallet labels can be created at any stage of the process. Either during palletizing, whilst preparing a shipment or during loading products, all unique ID’s from products on one pallet can be scanned and connected to a pallet label with a unique PAL number.

These pallet labels can also be generated with automatic palletizers.

The pallet label can be applied manually or automatically, with help of the Print & Apply Module.

Ovotrack provides an efficient and traceable solution for filling trucks and containers, using a dedicated End-of-Lane system designed for industrial environments.

Industrial-Grade Touchscreen System
At each filling station, a stainless steel Ovotrack End-of-Lane touchscreen PC is installed—built to withstand demanding production conditions and ensure easy operation.

Order Selection and Identification
Operators can select the correct production order using a keyboard or barcode scanner. For truck filling, the truck’s license plate number is entered. For container filling, a container ID can be entered if available.

Seamless SCADA Integration
If connected to a SCADA system, the relevant production batch is automatically assigned—ensuring accurate tracking and full traceability from batch to final destination.

Ovotrack’s Truck and Container Filling modules helps streamline outbound logistics while ensuring all data is correctly linked, captured, and stored.

17. Assembling Mixed Pallets

With wireless scanners used in the dispatch department, pallet labels can be created at any stage of the process.

Either during palletizing, whilst preparing a shipment or during loading graded eggs, all unique IDs from products on one pallet can be scanned and connected to a pallet label with a unique PAL-number. These pallet labels can also be generated with automatic palletizers. The pallet label can be applied manually or automatically. When building a mixed pallet, all case labels need to be scanned.

After scanning all case labels on a pallet, a pallet label with information of all cases on that specific pallet will be created. This is a group ID to maintain traceability.

18. Dispatch

Receive Graded

To complete traceability, the finished products that are prepared for stock have to be connected to sales-orders at the dispatch department before loading the trucks and shipping the products to the customer. For this reason, an Ovotrack PC with one or more wireless scanners can be installed at the dispatch department. On the dispatch computer a label printer is connected for printing new labels if needed.

With the wireless scanners the barcode on the picklist will be scanned first and after that the barcodes of the finished products or complete pallets must be scanned. The system will check whether the correct product is scanned and the best-before or sell-by date will be checked as well.

After connecting products to sales orders at dispatch, a delivery note or a bill of lading can be generated and the data can be forwarded to the ERP system for invoicing.

Truck Weights

Truck Weights

Many companies in the egg processing industry use a weighbridge to weigh a truck before and after unloading the truck to calculate the total egg weight delivered.

Ovotrack Truck Weights calculates the net weight of eggs in a truck and distributes it over all pallets in the truck. So no need to weigh each pallet individually. Ovotrack Truck Weights can also be used to get a weight report for a truck full of egg liquid or for other products than egg products.

Ingredient Batches

Ingredient BatchesWith the help of Ovotrack Ingredient Batches one can create batches of ingredients like salt, sugar or citric acid. The supplier lot codes can be captured and the time and tank ID when the Ingredient Batch is being used is stored in the database to be connected to the breaker batch or the finished goods batch.

SSCC Pallet Label

Pallet LabelWhen a pallet is connected to a sales order at dispatch, the correct SSCC Pallet Label can be generated and printed.

Warnings at Receive

Warning & Receive

With help of Ovotrack Warnings at Receive, warnings can be automatic generated for specific quality checks at the receive department.

These checks can be of different sorts and go from ‘check from which farm we have to take a sample of 12 eggs for the lab to check yolk color, shell strength and so on’ to ‘check whether Salmonella tests have been done in time for this flock’. Some of these checks result in a warning within Ovotrack Receive but others could result in a ‘Eggs cannot be received due to failing the quality tests’.

In case egg processing equipment is able to communicate the details about the egg flow in each stage of the process, Ovotrack can keep track of the batches from the moment of breaking eggs until filling the finished products.

Stand-Alone Palletizing

Printing Pallet Labels

With help of Ovotrack Stand-Alone Palletizing you will be able to generate and print pallet labels without connection to case labels.

Other than the Ovotrack Palletizing, where all case labels needs to be scanned in order to be able to generate a pallet label, can Ovotrack Stand-Alone Palletizing be used without the Ovotrack End of Lane labeling solution. 

This module can be used stand-alone and brings you stock control of finished products.

Label Data Updater

Label Data updaterWith Label Data Updater, labels can be updated manually. This gives the option to correct the quantity of eggs or to split a pallet label if a pallet with ungraded eggs is not graded completely.

 

Stock Locations

Stock LocationsWhen pallets of eggs are moved to a different cooler or when eggs are sold to other processors rather than being processed, these eggs have to be scanned out in order to keep the stock position of processing eggs up to date.

With Ovotrack Stock Locations, barcodes are put on the wall. With a wireless scanner the ‘change stock location barcode’ is scanned and after that the barcode on the pallet, thus moving it from one stock location to another.

Print ApplyAutomatic case-packing is growing in the egg industry. When packing is automated, labelling should also be automated. Ovotrack Print & Apply offers fully automatic and real-time labelling of finished products on a case conveyor.

The Ovotrack Task Scheduler can be used to automatically generate reports on a daily or weekly basis and to have these reports printed and/or sent by email. This can be useful for example to get an automatic email with yesterday’s breaking results or the actual inventory of eggs.
